ITALIAN ZUCCHINI CASSEROLE
zucchini (any amount) eggs flour spaghetti sauce Parmesan cheese
Slice zucchini; dip in beaten egg and flour. Fry in oil until browned. Use any size baking dish, as desired. Put enough spaghetti sauce into pan to cover bottom. Layer zucchi- ni in sauce. Sprinkle with grated Parmesan cheese.
Put another layer spaghetti sauce. Continue to layer as much as want. Bake in 350 degrees oven about 25 minutes. Freezes well in casserole. Put into oven on low heat until hot.
