i dont have the pampered chef recipe, but i do
have a simple recipe for corn and black bean
salsa that my husband concocted and is wonderful.
we especially like to serve it with bean and
chorizo tostadas.


i take 1 can of black beans, rinsed and well
drained, put it in a bowl and fill the empty
black bean can full with frozen corn that has been thawed.
add that to the bowl. add one chopped red bell
pepper, 1/2 to 1 chopped white onion, several fresh
chopped jalapeno peppers. mix all together with
the juice of 1 or 2 limes, a couple tablespoons of
freshly minced cilantro, a pinch of sugar, and
salt to taste. the recipe is pretty much to taste
and you can change the veggie amounts. it is
very easy to make though and impressive when
served with a mexican dinner. make your own tortilla
chips to serve with and you can really impress
friends with your ambition in the kitchen:)
