FRIED CHEESE STICKS

1 lb. block Mozzarella cheese
2 eggs
3 slices bread

Cut cheese into long sticks and put into freezer for 2
hours. Crumble bread into a bowl. In a separate bowl, beat
eggs with a whisk until creamy looking. Drop cheese sticks
(one at a time) into egg; take out with tongs. Drop into bread
crumbs. Immediately drop into hot deep fryer until golden
brown, usually about 3 minutes.

PEPPERY CHEESE STICKS

1/2 c. butter or margarine
1 c. (4 oz.) shredded Cheddar
cheese (sharp)
1 Tbsp. water
1 tsp. Worcestershire sauce
1 1/2 c. all-purpose flour
1/2 tsp. red pepper
1/4 tsp. salt

Place butter in a small glass mixing bowl. Microwave at
Low (10% power) for 2 minutes or until softened. Add cheese,
water and Worcestershire sauce; stir until well blended. Add
flour, pepper and salt, mixing well (mixture should resemble
soft cookie dough.) Turn dough out onto a floured board; roll
to 1/8-inch thickness. Cut into 2 1/2 x 1/2-inch strips and
place on a waxed paper-lined glass pizza plate. Place pizza
plate on an inverted saucer in microwave oven. Microwave at
High for 4 1/2 to 5 1/2 minutes or until cheese sticks are
firm, giving dish a half-turn after 2 minutes. Yield: about 8
dozen.

CHEESE STICKS

2 slices (1-inch thick) bread
1/4 c. margarine or butter,
softened
1/4 c. grated Parmesan cheese

Heat oven to 325 degrees. Cut each bread slice in half length-
wise and half again, forming 4 long strips. In small bowl,
combine margarine and cheese; mix well. Spread all sides of
each strip of bread with margarine mixture. Place on ungreased
cookie sheet. Bake at 325 degrees for 15 minutes. Serve warm. Makes
8 cheese sticks.

FRENCH FRIED CHEESE STICKS

sharp Cheddar, cut into sticks
warm milk
flour
cayenne pepper
beaten egg
seasoned bread crumbs

Soak Cheddar sticks in warm milk 10 minutes. Roll in
flour with cayenne pepper, then roll in egg, then roll in bread
crumbs. Deep fry 10 to 20 seconds, until golden brown.

FRIED CHEESE STICKS

1 small block Mozzarella
cheese
1 egg
Progresso bread crumbs
(Italian style)

Beat the egg with just a dash of milk. Slice the cheese
into small strips. Dip each into the egg mixture, then into
the crumbs. (You may need to repeat this procedure to make
sure the sticks are well coated). Place the sticks in a deep
fryer until they are golden brown and the cheese inside will be
melted. These are great dipped in your favorite sauce.
