PICKLED CELERY

--------------------------------------------------------------------------------
1 large celery
4 cloves garlic
1 Tbsp. salt
1/4 tsp. red crushed pepper
vinegar (white)
oil
water

Cut celery into 1-inch pieces. Wash. Put celery into
quart jar. Add garlic, salt and pepper. Press down and fill
jar. Add to jar 1/4 vinegar, 1/4 oil and 1/2 water. Seal.
Shake and refrigerate for 2 weeks.
Use as a side dish or mix in your salads.

CELERY AND ONION PICKLES

--------------------------------------------------------------------------------
1 qt. water
2 c. sugar
1/2 c. salt
1 qt. vinegar
celery (4 two-inch pieces per
jar)
onions (4 slices per jar)
alum (1/3 tsp. per jar)
cucumbers, cut 2-inches long
to fill jars

Wash and cut cucumbers; set in ice and allow ice to
melt. Prepare celery and onions. Place cucumbers, celery and
onions in sterilized jars; add alum. Bring vinegar, sugar,
water and salt to a boil. Fill and seal jars. Process in hot
water 7 to 10 minutes.
