Old Fashioned Pumpkin Cookies

2 cups all-purpose flour
1+1/3 cup quick oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup (2 sticks) butter softened
1 cup packed brown sugar
1 cup sugar
1 egg
1 teaspoon vanilla
1 cup solid pack pumpkin (canned)
3/4 cup chopped nuts
3/4 cup raisins

Preheat oven to 350 degrees F.

In a bowl, combine the flour, oats, baking soda,
cinnamon, and salt.

In a large mixing bowl, beat butter, brown sugar, and white sugar until light and fluffy. Add egg, vanilla, and pumpkin. Mix well. Gradually add flour mixture and mix well. Stir in nuts and raisins.

For each cookie, drop a tablespoon of cookie dough onto a greased baking sheet. Bake for 14 to 16 minutes or until firm and lightly brown.

Let stand for 2 minutes before removing from baking sheet.
