"Decked-Out" Pancakes

Yields: 1 dozen pancakes

1 1/2 cups maple syrup
2 tablespoons butter
3/4 cup chopped walnuts, divided
2 cups all-purpose baking mix
1 cup club soda
2 eggs
1 tablespoon vanilla extract
1 large banana, peeled and chopped

In a small saucepan, combine the syrup, butter, and 1/4 cup walnuts over low heat; mix well and simmer until warmed through and the pancakes are ready.

Meanwhile, in a large bowl, combine the baking mix, club soda, and eggs; whisk until smooth. Stir in the vanilla, banana, and remaining 1/2 cup walnuts.

Pour 1/4-cupfuls onto a hot greased griddle or skillet and cook for 2 to 3 minutes, until the edges are dry and the pancakes start to bubble. Turn and cook for 2 to 3 more minutes, or until golden. Serve topped with the warm sauce.

Note: To really deck out these pancakes, top them with banana slices, blueberries, and raspberries before drizzling with the sauce.
