Mexican Wedding Cake
From the Kitchen of : Twilighteyes Petsburgh/4401
Cake

2 c. sugar
2 eggs, slightly beaten
1 20-oz. can crushed pineapple
2 c. flour, sifted
2 tsp. baking soda
1 c. walnuts, chopped fine.

Blend all ingredients and bake at 350 degrees for 35 minutes. Test for doneness using a toothpick. (9" X 13" pan—
Do not grease)

Cream Cheese Frosting

1 stick butter, softened
1 8-oz. pkg. cream cheese, softened
1 tsp. vanilla
1 ½ c. powdered sugar

Blend ingredients together and spread on hot cake. (Refrigerate cake to keep fresh)
