Spinach Squares

4 Tbsp. butter
3 eggs
1 cup milk
1 cup flour
1 tsp. seasoned salt or herb blend
1 tsp. baking powder
1/4 cup chopped onion
1 (10 oz.) pkg. frozen chopped spinach, thawed
1 lb. Montery Jack cheese, grated

Place butter in 9x13 inch baking dish. Put in oven and set at 350. In mixer or processor, thoroughly blend eggs, milk, flour, seasoning, baking powder, and onion. Press all liquid possible out of spinach and add to mixture with cheese. Blend well.

Remove baking dish from oven and tilt to spread butter evenly over bottom. Pour in spinach mixture and smooth out evenly. Bake for 35 minutes. (Some butter will puddle on top, but do not overbake.) Let stand until firm enough to cut into bite-sized squares, about 40 minutes.

This freezes beautifully and can be reheated quickly for 10 minutes in a 350 oven.

Spinach Squares

(makes 60 appetizers)

2 10 oz packages frozen chopped spinach
1/4 cup butter
5 eggs
1 cup milk
1 cup flour
1 teaspoon salt
1 tablespoon baking powder
1 tablespoon minced onion
1 pound grated sharp cheddar cheese

Cook spinach. Drain, cool and squeeze dry. Melt butter in 13" x
9" glass or metal baking pan.

Beat eggs and mix in milk, flour, salt, and baking powder. Mix
well. Stir in minced onion, grated sharp cheddar cheese and the
spinach. Pour into the buttered pan. Bake 45 minutes at 350 F.
Chill and cut into 1 inch squares. Serve warm- reheat in oven or
microwave. Freezes well.

Spinach Squares

1/4 cup butter, melted
1 cup milk
1 tsp baking soda
1 pkg (10 oz) frozen spinach, thawed, drained and chopped
8 oz Monterey Jack cheese, cubed
3 eggs
1 cup flour

Combine eggs, milk, flour, and baking powder. Beat well. Add
spinach and cheese; mix well. Pour melted butter into a 13 x 9"
pan. Pour spinach mixture over butter and combine. Bake at 350
degrees for 35 minutes. Cool 10 minutes before cutting into squares.

Serves 6.

Spinach Squares

2 pkg. 10 oz frozen chopped spinach, thawed and well drained
1 C Jiffy Mix or Bisquick
1/2 C Parmesan cheese grated
1 C shredded cheese
1/2 tsp seasoned salt
4 eggs, beaten
1/2 C oil
1/2 C onion, chopped
1 garlic clove, minced
1 C shredded Monterey jack
1/2 tsp salt
1/2 tsp oregano

Grease a 9 x 13 pan. Heat oven to 350. Mix all ingredients in a large bowl and spread into prepared pan. Bake about 25 minutes. Let cool slightly and cut into squares.

This is great as an appetizer and a side dish for breakfast.
