BUTTERSCOTCH PIE (this is an old recipe)

(for 9" pie)
6 tbsp. butter
1 cup dark brown sugar
1 cup boiling water
3 tbsp. cornstarch
2 tbsp. flour
1/2 tsp. salt
1 2/3 cups milk
3 egg yolks, slightly beaten
1 tsp. vanilla
9" pie shell

(for 8" pie)
4 1/2 tbsp. butter
3/4 cup dark brown sugar
3/4 cup boiling water
2 1/4 tbsp. cornstarch
1 1/2 tbsp. flour
1/3 tsp. salt
1 1/4 cups milk
2 large egg yolks, slightly beaten
3/4 tsp. vanilla
8" pie shell

Directions

Melt butter in a skillet over low heat. When butter is golden brown, add brown sugar. Boil butter and sugar until foamy (2 to 3 minutes) stirring constantly. Stir in boiling water. Remove from heat. Mix in saucepan the cornstarch, flour and salt. Stir in milk gradually until smooth. Add the brown sugar mixture. Cook over low heat, stirring constantly, until boiling. Boil 1 minute. Remove from heat. Stir half of it into beaten yolks. Then blend into hot miture. Boil 1 minute longer. Remove from heat. Blend in vanilla. Cool, stirring occasionally. Pour into cooled baked pie shell. Chill. Top with sweetened whipped cream and decorate with toasted nuts. Serve cold.

Note: If topped with meringue, filling and pie shell need not be cooled. Cool finished pie at room temperature for 2 hours.

: I AM LOOKING FOR A BUTTERSCOTCH PIE RECIPE. THERE USED TO BE A LADY AT OUR CHURCH WHO MADE THESE AT EVERY MEAL WE HAD AND THEY ARE DELICIOUS. SHE HAS SINCE GONE ON TO A BETTER PLACE AND TOOK HER RECIPE WITH HER. SHE SAID SHE NEVER HAD IT WROTE DOWN, SHE JUST MADE THEM FROM MEMORY. PLEASE HELP IF YOU CAN....THANK YOU IN ADVANCE.
