Lacy Corn Bread from The Reef

Wednesday April 26, 2000


1 cup white cornmeal
1 3/4 cup water
1 level tablespoon salt
Dash pepper
1 small onion, chopped fine

Mix all ingredients well. Drop by tablespoon into 1/4-inch hot fat, allowing two tablespoons batter to one corn cake. Brown well; turn and brown other side. Drain on paper towels. Makes about 2 dozen.

NUTRITION INFORMATION: (1/24 recipe) 25 calories; 5 calories from fat; 0.5 grams fat; zero grams saturated fat; zero milligrams cholesterol; 290 milligrams sodium; 5 grams carbohydrates; zero grams fiber.
