This is the best roast pork I have ever had. Got the recipe from Taste of Home magazine. It's delish!
In a lg. ziplock bag:
1/3 C LaChoy Soy Sauce
1/3 C Liquid Smoke
Pork Roast
Seal, and marinade overnight.
Preheat oven to 400. Line a roasting pan with foil. Place the roast and marinade in roaster. Wash the peel on 2 bananas. Put the unpeeled bananas, one on each side of the roast. Seal the foil, put the lid on the roaster. Bake at 400* for 1 hour. Reduce heat to 325*, and continue baking per regular roasting directions. (I usually do a 3-4 pound roast for an additional 3 hours or so) Check the roast at the half way point- you may need to add 1/2 C or so of water. Discard banana, and separate the remaining juice and fat. Use to juice for dipping.
I usually serve this with macaroni salad, corn on the cob, baked beans, and you MUST have little buns to help soak up the juice!
