Chicken Sate with Peanut Sauce

Amount Measure Ingredient -- Preparation Method

6 skinless boneless chicken breast halves
1/4 cup soy sauce
2 tablespoons lime juice
1/2 cup butter -- melted
1 teaspoon coriander
1 small onion -- sliced
1 tablespoon olive oil
1/4 teaspoon cayenne
1 tablespoon soy sauce
1 teaspoon sugar
2 cloves garlic -- crushed
1 cup dry roasted salted peanuts
1/4 teaspoon ground ginger
1/2 teaspoon salt
2 tablespoons lime juice

Combine butter, 1/4 cup soy sauce, coriander, and 2 Tbsp lime juice. Marinate
chicken in this while you make peanut sauce: Saute onion and garlic in oil
until
tender. Cool. Place in blender, add everything else, and blend carefully.
Slowly and carefully add enough boiling water to form a thick paste. Now,
broil chicken until done, basting with marinade. Serve with peanut sauce.
