SOUTHERN BAKED CHICKEN

3 lb. chicken, cut up, or 3
lb. chicken pieces
1/2 c. corn meal
1 tsp. paprika
1/2 tsp. garlic powder
1 tsp. tarragon
salt and pepper to taste

Wash and pat dry the chicken. Combine corn meal and
spices in a covered bowl; blend well. Add chicken parts.
Shake well to coat with corn meal mix, a few at a time. Place
chicken in oiled (butter or margarine) baking dish; drizzle
with melted margarine. Bake at 350 degrees for 20 minutes each side.
BAKED CHICKEN COUNTRY INN

6 legs and 6 breasts of
chicken
1 1/2 tsp. ground thyme
1 1/2 tsp. tarragon leaves,
crushed
7 1/2 c. chicken broth
3/4 c. butter
1 1/2 c. flour
12 oz. can sliced mushrooms,
drained (reserve juice)
1/4 tsp. salt
dash of pepper

Rub the chicken with butter and sprinkle with the thyme
and tarragon. Place in a buttered baking pan. Pour chicken
broth over the chicken and cover. Bake at 375 degrees for 1 1/2
hours. Place 3/4 cups butter in top of double boiler and add
the flour. Stir and cook for 5 minutes. Add 9 cups of the
drippings from the baked chicken and the drained juice from the
mushrooms. Cook until thickened. Add salt and pepper, then
pour the sauce back over the chicken and sprinkle the mushrooms
over the top. Cover and bake at 400 degrees for 1 hour. Serve with
herb noodles or dumplings. Serves 8.

EASY BAKED CHICKEN

2 1/2 to 3 lb. chicken pieces
(legs, thighs and breasts)
1/2 tsp. ginger
1/2 of 6 oz. can frozen orange
juice concentrate
salt and pepper

Place chicken pieces on foil lined shallow pan, skin
side up (turning is unnecessary). Bake 30 minutes in 350 degrees
oven. In a pan combine orange juice concentrate, butter,
ginger, salt and pepper. Heat. Spoon over baked chicken and
bake for 30 minutes more or until chicken is tender. Good with
baked potatoes and sour cream.

SPICY SAUCE FOR OVEN BAKED CHICKEN

1/2 c. onion, sliced
1 tsp. salt
1 Tbsp. vinegar
1 Tbsp. sugar
1 Tbsp. Worcestershire sauce
1/2 tsp. chili powder
1/4 tsp. black pepper
1/2 c. catsup
1/4 c. water

Combine all ingredients in saucepan on stove. Simmer
and stir 15 minutes. Pour over chicken after it has baked for
30 minutes. Continue baking as directed for chicken. Place
chicken on platter when done. Spoon sauce over it again.
Serve.

BAKED CHICKEN OR PORK CHOPS

1 baking hen or 8 pork chops
1 twin pack of thin potato
chips
3 sticks butter, melted

If using hen, cut up. Place butter in a bowl. Finely
crush chips and place in a bowl. Dip chicken into melted
butter. Then dip into chips and cover well. Put chicken into
baking pan. Bake covered with aluminum wrap for 30 minutes.
Remove wrap and bake for an additional 30 minutes. Cook
approximately 1 hour at 350 degrees or until juicy and golden brown.
Note: Follow the same directions if using pork chops.

HONEY BAKED CHICKEN

2 chickens (1 1/2 to 2 lb.),
cut up
1/2 c. butter or margarine,
melted
1/2 c. honey
1/4 c. prepared mustard
1 tsp. salt
1 tsp. curry powder

Place chicken pieces in shallow baking pan, skin side
up. Combine butter, honey, mustard, salt and curry powder and
mix well. Pour over chicken and bake at 350 degrees for 1 1/4 hours,
basting every 15 minutes until chicken is tender and brown.
