Carrot Cake

1 1/2 cup oil
2 cups sugar
4 eggs
2 cups flour
2 tsp. soda
1 tsp. salt
1 tsp. cinnamon
2 jars jr. carrot baby food
or 3 cups grated carrots
1 1/2 chopped pecans

Icing:

1-8oz. cream cheese
1 stick butter
1 box powdered sugar
1/2 tsp. vanilla
1/2 cup coconut

Directions:

Mix oil, sugar and eggs. Add flour, soda, salt and cinnamon. When mixed, add carrots and pecans and blend. Pour into 9 x 13 greased and floured pan and bake at 300 degrees for 1 hour.
Icing: Cream cream cheese and butter. Add powdered sugar, vanilla and coconut. Mix well. Chill cake before frosting.

ANOTHER VERSION

Carrot Cake


2 cups sugar
1 cup vegetable oil
4 eggs, separated
2 tsp. baking soda
2 tsp. salt
2 cups flour
1 1/2 tsp. cinnamon
2 junior size jars baby food carrots

Frosting:

8 oz. cream cheese
1/2 stick butter, melted
2 tsp. vanilla
2 cups powdered sugar

Directions:

Do not use blender! Mix egg yolks with sugar. Add oil, carrots, flour, baking soda, cinnamon and carrots; mix. Add beaten egg whites. Pour into greased 9 x 13 inch pan. Bake at 350 degrees for 45 minutes.
Cool cake. Blend frosting ingredients. Frost cake and refrigerate.
