COOKED CARROT COOKIES

1 1/2 c. shortening
2 c. mashed cooked carrots
4 c. flour
4 tsp. baking powder
2 eggs
1 1/2 c. sugar
1/2 tsp. salt
1/2 tsp. vanilla
1 c. coconut

Beat shortening and sugar. Add carrots. Sift flour,
baking powder and salt. Add to carrots. Add vanilla and
coconut. Bake on ungreased baking sheet at 350 degrees for 10 to 12
minutes. Frost with orange frosting.

Orange Frosting:
powdered sugar
orange juice
butter
Mix together. Frost carrot cookies.

ZUCCHINI OR CARROT COOKIES

1/2 c. granulated sugar
1/2 c. packed brown sugar
1/2 c. margarine or butter,
softened
2 eggs
2 1/2 c. all-purpose flour
1 1/2 c. (1 medium) shredded
zucchini
1/2 c. chopped nuts
1 tsp. grated lemon peel
1 Tbsp. lemon juice
2 tsp. baking powder
1 tsp. ground nutmeg
1/4 tsp. salt

Mix sugar, margarine and eggs. Stir in remaining
ingredients. Drop dough by rounded teaspoons about 2-inches
apart onto ungreased cookie sheet. Bake until almost no
indentation remains when touched in a 375 degrees oven, about 8 to 10
minutes.
Carrot Cookies: Substitute shredded carrots for the
zucchini.

Lemon Frosting:
3 c. sugar (powdered)
1/4 c. margarine or butter,
softened
1 tsp. grated lemon peel
1 Tbsp. lemon juice
1 Tbsp. water
Mix sugar, margarine and lemon peel. Beat in lemon
juice and water. If necessary, stir in additional water, 1
teaspoon at a time, until spreading consistency is attained.

CARROT COOKIES

1 c. sugar
3/4 c. shortening
1 egg
1 c. baby food carrots
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 tsp. lemon extract

Combine sugar and shortening. Mix and then blend in
sifted dry ingredients gradually. Add lemon extract and
vanilla. Drop by teaspoonful onto greased cookie sheet. Bake
at 350 degrees for 15 minutes.

Icing For Carrot Cookies:
1 1/2 c. powdered sugar
1/2 heaping tsp. soft butter
1 tsp. grated orange rind
orange juice
Sift powdered sugar; mix in remaining ingredients. Add
enough orange juice for right consistency.
