Oatmeal Cinnamon Raisin Bread

1 1/2 cups oats
1 1/2 cups boiling water
3 tablespoons butter
3 tablespoons honey
1 tablespoon brown sugar
2 teaspoons salt
1/2 cup raisins
1 tablespoon yeast
2 eggs
4 to 5 cups white flour
Filling:
3 tablespoons melted butter
1 cup sugar combined with
2 tablespoons cinnamon

Combine oats and boiling water. Add next 5 ingredients. Let cool until warm (about 100 degrees). Add yeast, eggs and flour. Combine. Knead about 10 minutes. Put in greased bowl, cover and let rise until double in bulk. Punch down and cut in half. Roll our each half into a rectangle. Brush with melted butter and sprinkle with cinnamon and sugar mixture. Roll up. Tuck in ends and place in a greased loaf pan. Allow to rise until double in size. Bake at 375 for 40 minutes. Remove from pan and cool on racks. Brush with additional melted butter if desired.

Cinnamon Raisin Bread

1 pound loaf frozen bread dough (thawed)
1/2 cup raisins
1/4 cup sugar
1 tablespoons melted butter
1 teaspoon cinnamon

Combine sugar and cinnamon in separate bowl. Knead raisins into bread dough. Roll out the dough on a lightly floured surface, gently pulling to stretch it to a 14x17 rectangle. Brush the dough with melted butter. Sprinkle the sugar mixture over the dough and lightly pat it into the surface. Roll up the dough, starting with a short end. Pinch the edges and ends to close. Place seam-side down in a greased 8x4x5 loaf pan. Cover with oiled plastic wrap. Let bread rise in a warm place about 1 hour, until it's 1" above the pan. Bake at 350 for 25 to 35 minutes, or until the bread is lightly browned. Remove from pan and cool on a wire rack.

Raisin Bread (Lacto) - for bread machine

9 ozs. skim milk
1 1/2 cups whole wheat flour
3 tablespoons gluten flour added to enough flour to equal
1 teaspoon salt
3 tablespoons brown sugar
1 cup raisins
2 teaspoons cinnamon
1 1/2 teaspoons yeast

Place in bread machine in order recommended by manufacturer and select Light Crust.

Vanilla Raisin Bread - for bread machine

2/3 cup raisins soaked in 3 tablespoons vanilla
1 1/4 cup buttermilk
1 egg
1 teaspoon salt
3 tablespoons butter or margarine
2 tablespoons sugar
3 1/2 cups white bread flour
1 teaspoon cinnamon (opt.)
1 1/2 teaspoons dry yeast

Place ingredients in the bread machine pan in the order suggested by the manufacturer.
Select Sweet setting and start machine.


Carrot Raisin Bread

2 cups whole wheat pastry flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup apple or orange juice
1 cup finely grated carrots
1/3 cup raisins
1/4 cup toasted wheat germ

Combine flour, sugar, baking powder, baking soda and cinnamon in a large bowl and stir to mix well. Add the juice and carrots and stir just until the dry ingredients are moistened. Fold in the raisins and wheat germ. Coat an 8x4 loaf pan with nonstick cooking spray. Spread the batter evenly in the pan, and bake at 350 for 45 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let sit 10 minutes before turning onto a wire rack to cool.

Orange Raisin Bread

1/4 cup boiling water
1/2 cup raisins
1 small orange
9 teaspoons sugar
1 egg white
1 teaspoon vanilla
2 1/2 teaspoons vegetable oil
1 cup flour, minus 1 tablespoon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger

Preheat oven to 325.
Pour boiling water over raisins in a small bowl; set aside.
Grate the orange, saving the rind. Peel off and discard the white membrane. Cut up the orange pulp. Place the orange pulp, raisins and water in blender, blend just until raisins are chopped, not pureed.
In a large bowl, combine raisin mixture, orange rind, sugar, egg white, vanilla and oil. Mix. Add flour, baking powder, baking soda, salt and spices. Add to wet ingredients, stirring until moistened.
Place batter in a 8x4 loaf pan, that has been sprayed with nonstick cooking spray.
Bake 25 minutes until lightly browned. Cool in pan 10 minutes then remove to rack. Serve warm or cool.

Raisin Bread

3 cups flour
1/2 sup sugar
3 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon cinnamon
1 cup raisins
1 egg
1/4 cup melted butter
1 cup milk

Preheat oven to 350. Grease one 9x5 loaf pan.
In large bowl, measure flour, sugar, baking powder, soda, salt cinnamon and raisins. Stir thoroughly. Make a well in center.
In small bowl, beat egg until frothy. Mix in melted butter and milk. Pour into well. Stir just enough to moisten. Scrape into greased pan.
Bake for 1 hour. Serve plain or toasted with butter.
