Here are some easy recipes that taste like the old candy. I got them from my mother-in-law who is the queen of quick and easy as she runs a company from her home.

Divinity
2 cups sugar
1/8 tsp salt
1/2 cup light corn syrup
1/3 cup water
2 egg whites
1tsp vanilla
1-1/2 cups chopped pecans
Combine sugar, salt, cornsyrup and water in 8cup glass measure. Microwave on HIGH, uncovered, 3 minutes. Stir. Microwave on HIGH, uncovered, 8 to 10 minutes or until a small amount dropped in very cold water forms a hard ball.
Meanwhile, beat egg whites in large bowl until stiff peaks form. Pour hot syrup in thin stream over egg whites while beating at high speed. Add vanilla. Continue beating until mixture holds its shape and starts to lose its gloss (about 5 min). Fold in pecans. Spoon onto waxed paper. Makes about 50 pieces.


Rocky Road Candy (My husband's favorite)
1 12oz package of chocolate chips
1 12oz package of butterscotch chips
1 cup of peanut butter
1 101/2oz package of miniture marshmallows
1 cup of salted peanuts
Combine chocolate,butterscotch, and peanut butter in an 8 cup glass measure. Microwave at 70% power about 5 minutes. Stir until melted. Fold in marshmallows and peanuts. Pour into greased 13 X 9" pan. Refrigerate 2 hours or until set. Cut into squares.

Pralines
2 cups sugar
1/8 tsp. salt
1/4 cup buttermilk
2 cups pecan halves
2 Tbsp. butter
1tsp baking soda
Combine all ingredients, except baking soda, in an 8-cup glass measure. Cook on HIGH, 12 min., stirring at 4 min. intervals. Stir in baking soda. Cook 2 to 3 min. on HIGH. Beat and drop by spoonfuls onto greased waxed paper.
