Million Dollar Cookies

2 egg whites
2/3 cup sugar
1 teaspoon vanilla
2 tablespoons instant coffee powder (or granules)
12 oz. semi-sweet chocolate chips
1 cup roughly chopped pecans
2 teaspoons grated bitter chocolate

Preheat oven to 350. Beat egg whites until stiff. Slowly add sugar, then vanilla while continuing to beat. Fold in coffee, chips and nuts. Drop spoonfuls onto cookie sheet covered with foil or waxed paper. If the dough is properly stiff, cookies will hold their shapes so you can put them together. Sprinkle cookies with the grated chocolate. Put cookie sheet in oven and immediately turn off oven. Forget about them. They are done when they are firm enough to come off cookie sheet in one piece. But don't check for at least two hours, as oven will lose heat.
