CROGAN-BOLOGNA

1 c. water
2 Tbsp. Tender Quick salt or
canning salt
1/4 tsp. onion powder
1/4 tsp. garlic powder
1 to 1 1/2 tsp. liquid smoke
2 lb. lean hamburger or
venison burger

May use more or less onion and garlic to your taste.
Mix all ingredients together and let stand in refrigera-
tor 24 hours. Mix again and mold into 2 bologna shaped loaves.
Place on rack in baking pan to drain off grease. Bake at 300 degrees
for 1 1/4 hours.
