Grated Apple Pie

Grated Apple Pie

6-8 Servings

1 1/4 cups sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 eggs, beaten
1/2 cup (1 stick) butter, melted
1 teaspoon vanilla extract
3 cups coarsely grated apples (about 4 medium-sized apples)
1 unbaked 9-inch deep-dish pie shell

Preheat the oven to 400 degrees F.

In a large bowl, combine the sugar, flour, cinnamon, and nutmeg. Add the eggs, butter, and vanilla, then fold in the apples.

Pour the mixture into the pie shell and bake for 10 minutes.

Reduce the temperature to 350 degrees F. and bake for 60 to 65 minutes more or until the top is golden.

Cool completely and serve.
