PASELITAS
(Holiday/Party Fare In Dominican Republic)
Dough:

3 c. flour
1 tsp. salt
5 Tbsp. oil
enough water to make
applicable dough (about 4
Tbsp.)

Filling:
1 lb. ground round
1 medium onion, chopped
1 1/4 c. green olives (without
pimento), chopped
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. allspice
2 Tbsp. pine nuts (optional)
corn oil for frying

Dough: Mix flour, salt and oil into a coarse mixture
and add water, a tablespoon at a time until dough forms a ball
and does not stick to the hands. Leave dough in ball in bowl
and cover bowl with Saran Wrap. Refrigerate until ready to
use. (Keeps for days).
Filling: Brown ground round and onion; adding remaining
ingredients as mixture finishes cooking.
To Prepare: Divide dough into walnut size pieces and
roll each piece into a thin circle. Place 1 to 2 tablespoons
of filling on each circle of dough. Spread a few drops of
water on outer edge of dough and cover with another circle of
dough. Use a fork to press edges of dough together.
To Cook: Deep fry in corn oil until golden brown and
bubbles form in dough. Turn over to brown both sides.

SWEET CORN BREAD
(Pan Dulce de Maiz)

3 c. yellow corn meal
1 c. all-purpose flour
3 Tbsp. baking powder
1/2 tsp. each cinnamon, nutmeg
and cloves
1/2 c. sugar
1 tsp. salt
6 Tbsp. each butter and lard
1/2 c. each milk and coconut
milk
4 eggs, well beaten
grated rind of 1 lime or lemon
2 c. finely grated coconut
8 oz. mixed fruits and peels

Sift all dry ingredients, including the spices, togeth-
er. Cream butter and lard until light and fluffy and add to
the corn meal mixture. Add the milk, coconut milk, eggs and
grated rind. Mix in the grated coconut and the fruits and
peels, lightly floured. Mix well and pour into 2 greased 9 x
5-inch loaf pans. Bake for about 35 minutes in the center of a
350 degrees oven or until toothpick inserted comes out clean. Makes 2
loaves. Recipe from Dominican Republic.
