This is a recipe handed down from mother to daughter for about 4 generations. It is still the best bread and hot roll recipe I have ever come across.

In a sauce pan scald the following:
1 cup milk
1/2 cup sugar
1/4 cup butter or margarine
1 tsp salt
Let cool (If i am in a hurry, i throw the pan in the freezer until room temperature.)

Take 1 package of dry active yeast and mix it with a 1/4 cup of lukewarm water and a tsp of sugar. let sit five minutes.

In a bowl, beat one egg and add the milk mixture and yeast water. Add 3 1/2-4 cups flour and knead 5-10 minutes or until elastic in nature. let rise in a greased bowl until doubled in size. make sure to get grease (oil) on both sides of dough. when risen, punch down. At this point, you can either shape and put in loaf pan and let rise until doubled again and then pop in the oven at 400 degrees for about 25-30 minutes or until lightly browned. or what i like to do is make hot rolls. for hot rolls, roll out two quarter sized balls and place in greased (Pam) muffin tin. I like doing it this way because when they are done, they split in half for buttering so easily. After they are in the muffin tins, let rise again until doubled and then bake at 400 10-15 minutes or until lightly browned. brush with melted butter and serve. When it is rising both times, make sure you keep a damp tea towel over it.
