Raspberry Jalapeno Topping

1 Pint fresh raspberries
1 jalapeno pepper -- seeded and finely
-- Chopped
1/2 lemon -- juiced
1/3 Cup sugar
3 Tablespoons Fresh Mint -- Chopped

In a small saucepan over low heat, combine the berries, jalapeno, lemon
juice and sugar. Gently stir just until heated through and berries begin to
fall apart. Remove from heat, stir in the mint and spoon over Cornmeal
Griddlecakes.
Yield: 1 cup

CHIPOTLE SAUCE #1

Amount Measure Ingredient -- Preparation Method

3 cups chopped tomatoes
2 chipotle chiles (see note)
2 slices bacon, finely cut up
1/4 cup onion, finely chopped
3 cups tomatoes, finely chopped
1 cup beef broth
1/4 cup carrot, finely chopped
1/4 cup celery, finely chopped
1/4 cup fresh cilantro, snipped
1/2 teaspoon salt
1/4 teaspoon pepper

NOTE: You can make this sauce as hot as you want by adding up to a total of
4 dried Chipotle chiles.

Cover chilies with warm water. Let stand until softened, about 1 hour.
Drain and finely chop. Cook and stir bacon and onion in a 2-quart saucepan
until bacon is crisp; stir in chilies and remaining ingredients.

Makes about 4 cups sauce.

1 tablespoon olive oil
1/2 cup onion -- chopped
2 tablespoons garlic -- minced
1 cup catsup
1/4 cup malt vinegar
1/4 cup brown sugar -- packed
1/4 cup strong brewed coffee
3 tablespoons stout beer (Guinness)
2 tablespoons light molasses
2 tablespoons tomato paste
2 tablespoons dijon mustard
2 teaspoons worcestershire sauce
1 1/4 teaspoons chipotle peppers -- minced
1/4 teaspoon black pepper -- ground

Heat oil in a heavy large saucepan over medium heat. Add onion, garlic =
and saut=E9 until tender (about 5 min).
Add all remaining ingredients. Cover and simmer until slightly =
thickened, stirring occasionally (about 25 min). Season with salt.

Serving Ideas : Brush on chicken or ribs during last 10 min of grilling.

NOTES : Sauce can be made up to 1 week ahead. Cover and refrigerate.

Canned chipotles in adobo sauce can be purchased at latin american =
markets and some supermarkets. They are smoked jalapeno's..
Chipotle Cranberry Sauce

1 tablespoon adobo sauce from chipotle chilies
1 cup dried cranberries (Crasins)
1/4 cup brandy or bourbon
1/4 cup brown sugar
1/4 cup lemon juice
1 cup water

Combine all ingredients in a saucepan and simmer 15 minutes, covered. Turn
off heat and let sit, still covered, for 15 more minutes. Put ingredients
in a food processor and pulse until desired consistency. Texture may range
from somewhat coarse to smooth. Serve with turkey or mix with 1 stick of
butter and spread on rolls. Makes 1 1/2 to 2 cups.

1/2 Tsp Salt
1/4 Cup Worcestershire Sauce
4 Canned Chipotle Peppers -- (4 to 6)

Heat thoroughly. Bring to a boil. Simmer 10 minutes. Transfer to blender
and blend thoroughly.

salt and pepper to taste

This sauce is supposed to be used on grilled Bluefish fillets, but it seems
like it would be good on a lot of things.

In small bowl whisk together vinegar, lime juice, mustard, chipotles,
cilantro & sugar. Gradually whisk in olive oil. Season with salt & pepper.

Not very hot but it might help use up those big cans of chipotles.

Notes: Chipotles are smoked jalapeno peppers.
sauces with a smokey, zesty flavor.
