Here are 2 recipes for you. The casserole I made for Thanksgiving and people raved over it! It's pretty easy too. The second one is an idea I got from our local Chinese resturant and I went home and made it myself. DH really likes it too.

Sweet Potato Casserole with topping
3 Cups cooked sweet potatoes (I bake mine in oven in foil just like regular potatoes)
3/4 cup sugar
1 egg
1/3 cup milk
1/2 cup butter
1 tsp vanilla

Drain water from potatoes. Add sugar, eggs, milk, butter, and vanilla. Beat with hand mixer till mixed and smooth. Bake at 350 for 20 minutes.

Topping
1 cup light brown sugar
1/3 cup butter
1/2 cup plain flour
1/2 cup chopped nuts (pecans are good)

Mix 1st 3 ingredients for topping and sprinkle or spread over top. Sprinkle pecans over top. Bake again at 350 for 15 minutes.

SECOND RECIPE

fried sweet potatoes

peel sweet potato. Slice very thin into rounds. Drop in hot grease and fry till crisp. Drain well. Sprinkle with powdered sugar. Enjoy.
