Sweet Potato Pie

Serves: 6 to 8

2 cans (29 ounces each) sweet potatoes or yams, drained
1 can (12 ounces) evaporated milk
2 tablespoons butter, softened
2 eggs
3/4 cup firmly packed light brown sugar
1/2 cup biscuit baking mix
2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Preheat the oven to 350 degrees F. Coat a 9-inch deep-dish pie plate with nonstick cooking spray.
Combine the sweet potatoes and evaporated milk in a blender and blend until smooth. Pour into a large bowl and set aside.

Add the remaining ingredients to the blender and blend until well combined, scraping down the sides as needed.
Add to the sweet potato mixture; mix well. Pour into the pie plate, mounding in the center, and bake for 50 to 60 minutes, or until a wooden toothpick inserted in the center comes out clean. Allow to cool completely on a wire rack before serving.
