Popcorn Stuffing

Popcorn Stuffing

Serves: 6 to 8

6 cups crumbled corn bread or corn muffins (see note)
3 cups popped popcorn (see note)
1 medium onion, finely chopped
1 can (14 1/2 ounces) ready-to-use chicken broth
1/2 cup (1 stick) butter, melted
2 eggs
1 1/2 teaspoons rubbed sage

Preheat oven to 375 degrees F. Coat an 8-inch square baking dish with nonstick cooking spray.

In a large bowl, combine all ingredients; mix well.
Spoon into baking dish. Bake for 40 to 45 minutes, or until the center is set.

Note: Ready-made corn bread and muffins can be found in the bakery section of your supermarket, or you can start from scratch with your favorite corn bread recipe. One regular package of microwave popcorn will yield 7 to 8 cups of popcorn.
