star fruit = starfruit = carambola = five-angled fruit = five corners = Chinese star fruit Notes: Star fruit have a clean, crisp texture, and they make terrific star-shaped garnishes when sliced. They're also easy to use, since they don't need to be peeled or seeded, and they're slow to discolor. Some varieties are sweet, some are sour. Try to avoid ones that have brown spots or streaks. Substitutes: lemon slices (as garnish)

Fruit Exotica
Curry powder and almond extract make this a very unique recipe. Florida Fruit Exotica may be served on leaf lettuce for a luncheon or bridal shower, in a crepe for an elegant dessert after a dinner party, or over pound cake or ice cream for an everyday dessert. Whenever you serve it, it is sure to tempt your guests’ tastebuds.

1/3 cup Florida orange juice
3 Tablespoons Cream of Coconut
1/2 teaspoon pure almond extract
1/2 teaspoon curry powder
1 cup reduced fat sour cream 2 Florida mangoes, cubed
4 Florida carambolas or star fruit, sliced
1 cup Florida blueberries
2 cups Florida strawberries, chopped
1 1/2 cups Florida orange sections

Step 1: In a large bowl, mix together orange juice and the following four ingredients with a spoon. Set aside.
Step 2: Add prepared fruit to dressing, and toss thoroughly. Cover and refrigerate several hours or overnight. Serve on leaf lettuce as a salad, top slices of pound cake or fill a crepe for dessert. Yield: 8 servings.

Fruit Pizza

1 roll Pillsbury slice and bake sugar cookies
8 oz. cream cheese
1 tsp. vanilla
1/2 cup sugar
bananas,star fruit sliced
strawberries, sliced
white seedless grapes, cut in 1/2
crushed pineapple, drained

Glaze:


1 cup sugar
3 Tblsp. cornstarch
dash of salt
3/4 cup water
1 cup orange juice
1/4 cup lemon juice


Use pizza pan and preheat oven to 350 degrees. Cut cookies 1/8 inch thin and spread close together over pizza pan. Bake 8 to 10 minutes. Let cool. Mix cheese, vanilla and sugar and spread over cooled cookie. Arrange fresh fruit on cream cheese mixture. Mix sugar, cornstarch and salt; add water, orange juice and lemon juice in saucepan. Bring to a boil; cook 1 minute until slightly thickened. Cool. Pour over fruit and place in refrigerator until ready to serve.
