Easy Lemon Pie

1 (9 inch) pie shell
2 egg yolks, beaten
1 (14 ounce) can sweetened condensed milk
1/2 cup lemon juice

Preheat oven to 400 degrees F (200 degrees C).

Prick pie shell with a fork and bake in preheated oven for
8 minutes, or until crust is lightly browned. Remove from
oven and cool.

In a medium mixing bowl blend egg yolks and condensed
milk. Stir in lemon juice. Heat this mixture in a double
boiler, stirring constantly with a wooden spoon, until it
thickens. Pour into piecrust and refrigerate at least 1
hour before serving.

Makes 1 pie

Creamy Lemon Pie

1 (9 inch) prepared graham cracker crust
1 (14 ounce) can sweetened condensed milk
1/3 cup fresh lemon juice
1 (12 ounce) container frozen whipped topping, thawed

Squeeze juice from lemons into a medium mixing bowl.
Stir in condensed milk and whipped topping. Pour into
pie crust. Chill.

Shaker Lemon Pie

2 large lemons
4 eggs, well beaten
2 cups sugar
Pastry for 2 crust pie

Slice lemons as thin as paper, rind and all. Combine with sugar; mix well.
Let stand 2 hours, or preferably overnight, blending occasionally.

Add beaten eggs to lemon mixture; mix well. Turn into 9-inch pie shell, arranging
lemon slices evenly. Cover with top crust. Cut several slits near center.

Bake at 450 degrees for 15 minutes. Reduce heat to 375 degrees and bake for about
20 minutes or until silver knife inserted near edge of pie comes out clean. Cool
before serving.

Lemon Chess Pie

1 (9 inch) pie shell
2 cups white sugar
1/2 cup butter, softened
5 eggs, beaten
1 cup milk
1 tablespoon all-purpose flour
1 tablespoon cornmeal
1/4 cup fresh lemon juice
3 tablespoons lemon zest

Preheat oven to 350 degrees F (175 degrees C).

In a large mixing bowl, cream together sugar and butter
or margarine until light and fluffy. Beat in eggs and milk.
Add flour, cornmeal, lemon juice, and lemon rind. Mix
until smooth. Pour mixture into pastry shell.

Bake in preheated oven for 35 to 40 minutes, until set in
center.

Makes 1 - 9 inch pie
