Coconut Dream Pie

1 small pkg instant vanilla pudding

1 cup heavy cream

1 cup milk

1 tsp vanilla extract

1 cup shredded coconut

Dream Topping:

2 pkgs dream whip topping prepared to pkg directions

1/2 tsp coconut extract

1/2 cup powdered/icing sugar

Pie Crust:

1 cup plus 3 tbl flour

1 tsp salt

1/2 cup shortening

3 tbl cold water

Mix salt into flour, add shortening and using two butter knives, cut shortening into flour until it becomes crumbly. Add one tbl water at a time still using the two knives to cut water into the dough. Continue until all water is used.

Do not over work the dough or it will become tough. This dough can only be rolled out once.

Form a large ball with the dough. On floured board, roll dough into a large circle. Turn into 9" pie pan. Flute the sides to make the crust.

Bake @425 for about 20-25 minutes, or until light golden brown. Cool on wire rack.

Mix the milk and cream with the pudding on high until thickened. Add the 1 tsp coconut extract, continue to beat on high until thick. Add the coconut and mix well.

Spoon filling into pie crust. Prepare the dream whip adding the powdered/icing sugar and spoon onto pie. Sprinkle more coconut over the topping if desired. Chill for at least 2 hours before serving.
