Bratwurst with Red Cabbage

Serves 4

1 small red cabbage, coarsely shredded
1 small apple, peeled and diced
1 tbsp. lemon juice
2 tsp. salt
1/2 cup water
1 tbsp. butter or margarine
1 small onion, chopped
1 tbsp. wine vinegar
1 lb. bratwurst, cut into chunks

In covered 4-quart saucepan over medium heat, simmer cabbage with
apple, lemon juice, 2 teaspoons salt, and 1/2 cup water for 15
minutes, stirring occasionaly.

Meanwhile, in 10-inch skillet over medium heat, in hot butter, cook
onion until tender.

Stir in cabbage mixture, 1 teaspoon salt, vinegar, and bratwurst
sausage chunks. Reduce heat to low; cover and simmer 30 minutes or
until bratwurst chunks are cooked through. Serve.
