Here is the information I have that a friend of mine got from a children's book.

The Candy Cane
Announcing the Birth of the Saviour
The candy maker who invented the candy cane designed it to display the message of Christmas and Christ as Lord and Saviour!
The white stripes represent the purity and sinlessness of Christ. The small red stripes stand for the scourging of Jesus before the cross, and the large red stripes represent the blood that Jesus shed for each one of us on the cross!
The shape of the cane is that of a shepherd's staff, reminding us that Jesus is the Good Shepherd. When the cane is turned upside-down, it is the letter "J", the first letter of Jesus' name.
