Apple Upside Down Cake

1/3 cup packed light brown sugar
2 tablespoons apple sauce
6 tablespoons margarine or butter
3 med. apples peeled, cored and cut into 1/4 inch-thick wedges
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
2/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/3 cup milk

Preheat oven to 325 F. In a large skillet heat brown sugar with 2 tablespoons apple sauce
over medium heat until melted, stirring occasionally. Add apples wedges and cook over high heat 7-8 minutes
until apples are fork tender and beginning to brown. Transfer apple mixture into a greased
and lightly floured 8x8 baking dish or 9 inch pie plate. In a small bowl combine flour baking
powder and salt; set aside. In a large bowl beat the 6 tablespoons butter with the sugar until creamy,
add the egg and vanilla. With a rubber spatula alternately fold in flour mixture and milk,
beginning and ending with the flour mixture. Spread over apples.

Bake 40-45 minutes or until toothpick inserted in center of cake comes out clean. Immediately loosen
edges of cake with tip of knife; invert cake onto a serving plate .
