Mix in a saucepan 1 cup natural peanut butter, a teaspoon or so of Seseme oil, red pepper to taste and some water to thin peanut butter. heat until hot and tofu and then serve over ramen noodles. top with chopped scallions and cucumber slices(the long way). Yum, yum. So easy and the kids love it. How about eggplant parmasean with soy cheese. Celantano's makes a great one. Learn as much as you can about cooking with tofu. It is great stuff. Have you daughter look into the vegetarian education network on the internet for more help. They even have a news letter for vegans. Try getting a subscription to Vegetarian times. That is what I got my teenage neice when she decided to be a vegetarian (vegan). Good luck... I have plenty of other receipes if your still interested. If my picky kids eat them I am sure yours will to. '
