BUTTERSCOTCH PIE

1/4 cup cornstarch
1 cup dark brown sugar
1/4 tsp. salt
2 cups scalded milk
3 beaten egg yolks
1/2 tsp. vanilla
2 tbsp. butter
1 9" baked pie shell
3 beaten egg whites
6 tbsp. sugar

Directions

Mix first 3 items in top of double boiler. Slowly add scalded milk, cook until thick stirring constantly. Slowly add small amount of hot mixture to egg yolks. Stir into remaining hot mixture. Cook 5 minutes. Cool, add butter and vanilla. Pour into pie shell, spread with meringue made with egg whites, pinch of salt, and 6 tbsp. sugar. Bake at 350 degrees for 12 to 15 minutes or until slightly browned.

: : I AM LOOKING FOR A BUTTERSCOTCH PIE RECIPE. THERE USED TO BE A LADY AT OUR CHURCH WHO MADE THESE AT EVERY MEAL WE HAD AND THEY ARE DELICIOUS. SHE HAS SINCE GONE ON TO A BETTER PLACE AND TOOK HER RECIPE WITH HER. SHE SAID SHE NEVER HAD IT WROTE DOWN, SHE JUST MADE THEM FROM MEMORY. PLEASE HELP IF YOU CAN....THANK YOU IN ADVANCE.
