BOSTON CREAM PIE

--------------------------------------------------------------------------------
1/2 c. margarine
3/4 tsp. vanilla
1 c. sugar
2 eggs
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2/3 c. milk

Filling:
1/3 c. sugar
3 Tbsp. flour
1/4 tsp. salt
1 1/4 c. milk
1 egg
1 tsp. vanilla
1 Tbsp. butter

Cream together well margarine, vanilla and sugar. Beat
in eggs. Then sift together flour, baking powder and salt.
Beat in alternately with milk. Pour into a greased 9-inch
round pan. Bake at 350 degrees for 30 minutes. Cool 10 minutes.
Remove from pan.
Filling: Mix sugar, flour and salt in milk. Bring to a
boil, stirring and cook 2 minutes. Add a little hot mixture to
egg and beat. Add to flour mixture (slowly beating). Heat
just to boiling. Stir in 1 tablespoon butter and 1 teaspoon
vanilla. Cover and chill.

Chocolate Glaze For Boston Cream Pie:
2 Tbsp. margarine
1 oz. unsweetened chocolate
1 c. confectioners sugar
2 Tbsp. boiling water
Melt margarine and unsweetened chocolate. Stir in
confectioners sugar and boiling water. Stir until smooth. Use
immediately. To assemble pie. Split cake layer. Fill with
cream filling. Spread top with chocolate glaze.
